Recipe - How To Make Crispy Garlic

Crispy garlic adds crunch and mild garlic flavour to all kinds of recipes. It is prepared in hot oil to make it brown and crispy.  It is a great garnish for char siew (barbecue roast pork)

Garlic is an antioxidant and helps to boost the immune system.

The garlic and the hot garlic oil are often used as garnish to flavour steam fish and vegetable dishes.


It is much easier to prepare than crispy shallots. It takes about 2 minutes to make crispy garlic and oil in a microwave oven for about 10 pieces of garlic.

For 10 cloves of garlic, peel and chopped them finely.
Put in a bowl and cover the garlic with cooking oil, about 2 tbs.
Put in microwave oven and heat on high for about 2 minutes.
Stir to make sure they are evenly cook and check to see if they start to brown.
Continue in increments of 10 seconds until garlic turns golden brown.

For different amount of garlic, timing will be different. Start with shorter timing for the microwave.

No microwave ? No problem. The wok or the pan will do. Just have enough oil to cover the garlic.
Heat the oil in the wok or pan. When the oil is hot, add the garlic, stir fry until garlic turns golden brown.
