Recipe - Luffa (Ridge Gourd) Stir Fry With Egg

The luffa or ridge gourd is a dark green ridged (10 ridges) vegetable having white pulp with white seeds embedded in a spongy flesh. It is a storehouse of nutrients like fibre, vitamin C, zinc, iron and magnesium. It is commonly cooked stir fried or in a soup.

In this recipe, the luffa is stir fried with eggs.

The first thing to do is to remove the hard skin of the luffa with a peeler. The skin can be quite hard. I cut them into strips of half cm thick. I find that blanching them in boiling water for 1 minute make it easier to cook and the taste comes out better. Taste is mildly sweet.

Ingredients:
1 luffa, peeled and cut into strips of half cm thickness
2 eggs, beaten
A dash of pepper
1 tbs of light soy
3 cloves of garlic, finely chopped
1 tbs of oil

Method:
Blanch the cut luffa in boiling water for 1 minute and set aside
Heat oil in a wok or pan till hot.

Add the garlic and fry till fragrant on medium heat
Toss in the luffa
Toss in the eggs, add the light soy and pepper.

Dish is done when the eggs are done.

Story Of The Starfish

While walking along the beach, an elderly gentleman saw someone in the distance leaning down and picking something up and throwing it into the sea.

As he got closer, he noticed that the figure was that of a young man, picking up starfish one by one and tossing each one gently back into the water.

He got closer still and called out, "Good morning ! May I ask what it is you are doing ?"

The young man paused, looked up and replied, "Throwing starfish into the ocean."

The old man smiled, and said, "I must ask, then, why are you throwing starfish into the ocean?"

To this, the young man replied, "The sun is up and the tide is out. If I don't throw them in, they will die."

Upon hearing this, the elderly observer commented, "But, young man, do you realise that there are miles and miles of beach and there are starfish along every mile ? You can't possibly make a difference."

The young man listened politely. Then he bent down, picked up another starfish and threw it back into the ocean, past the breaking waves and said, "It made a difference for that one".

Recipe - Steam Sutchi Fillet With Ginger Oil

The sutchi fish (catfish) is a fatty fish with mild flavour. That means the fish will absorb the flavours of the seasoning. The sutchi fillet is a versatile ingredient. It can be steamed, fried or grilled and is used often in the popular fish and chips.

The fillet is sold frozen because most of them are imported from Vietnam, In this recipe, the fillets are steamed and topped with fried ginger and oil.

To prepare the fillet, the first thing to do is to rub lightly a bit of salt on the fillet after thawing and rinse away the salt. This will take away any sea smell or mud smell from the fish.

Ingredients
2 sutchi fillets
1 sprig spring onion, cut into 1 inch length
2 slices of ginger for steaming
2 inches of ginger, finely julienne for frying
1 teaspoon of oyster sauce mixed with 1 teaspoon of light soy
1 chilli padi
2 tbs of oil

Method:
Lightly rub salt on the fillet and rinse the fillets
Place the fillet on serving plate, spoon the oyster sauce mix with light soy over the fillet.
Place the ginger slices and a few pieces of spring onion over the fish.
Steam for about 8 minutes.

Remove the steamed ginger slices and spring onion.
Replace with fresh spring onions.

In a wok or pan, fry the julienne ginger in oil till fragrant and the ginger is golden brown.

Spoon the ginger and oil over the fillet and serve (top left picture).

In this video in Taiwanese, a mixture of hokkien and mandarin, the steam fish is flavoured with crispy soya beans. The fish fillet is flavoured with salt and pepper and steamed for about 5 minutes. Hot bean paste is fried separately to give the oil flavour. The oil is used to fry the crushed soya beans till crispy. Crispy soya beans are spooned over the steamed fish.

Recipe - Singapore Fish Head Curry

The burst of flavours from the variety of spices that go into making the Singapore fish head curry will jolt the taste buds like no other recipes can match. The list of spices alone can bewilder anyone. Turmeric, chilli, coriander, aniseed (or star anise), cumin seeds, fenugreek, pepper, cloves, fennel seeds, mustard seeds, cardamom and cinnamon make up this list.

If you add other condiments that accompany the spices, the mind boggles. Other condiments include garlic, ginger or galangal, onions, candle nuts, lemon grass and curry leaves.

I use salmon fish head for practical reason. At $6.90 a kg, it is about half the price of the snapper head. It is quite a big head, weighing 800 grams. The salmon head goes very well with the curry.

For the curry, I was able to buy the fresh fish curry paste from the market. For 50 cents, the lady gave me 1 tsp of turmeric paste, 1 tsp of ginger paste, 2 tsp of chilli paste, 2 tsp of coriander paste, 1 tsp of garlic paste and 1 tsp of mixed spice paste.

Fresh curry paste have a much stronger flavour. But if you are not able to get it fresh, fish curry powder in packet form (picture on right) is available and 2 tbs would be enough for 1 big fish head. There is also fish curry paste available in packet form.

But if you do like to make your own curry paste the good old fashion way of using mortar and pestle, I recommend this one by Carole (Link). For cooking fish curry, I would add a knob of fresh turmeric to her already long list of spices.

Ingredients:
Curry paste (as above)

Additional ingredients:
1 large onion, finely chopped,
knob of ginger, peel and chopped
1 stalk of lemon grass, cut into 1 inch and crushed
2 cloves of garlic, finely chopped
1 tbs of salt
2 green chili padi
1 tsp of tamarind paste, mixed in half cup of water
curry paste and 40 ml of coconut milk
2 sprigs of curry leaves
60 ml of coconut milk
1 lime for garnishing
1 sprig of fresh coriander for garnishing

2 tbs of oil

Vegetables:
1 tomato, cut into slices
1 eggplant, cut into bite size
5 okra, cut into bite size

Note: 
A tbs of prawn paste can be added to give extra taste and flavour.
The wok or pan must be big enough to hold the fish head which is quite big.
My wok is 45 cm and can hold only one big fish head.

Method:
In a wok or pan heat the oil in medium heat till hot
Toss in the onion, ginger and garlic and fry till fragrant.
Add the curry paste, lemon grass, curry leaves and chilli and stir fry until fragrant.
Add tamarind juice and salt.
Add 2 cups of water and bring to a boil.
Add the coconut milk

At this stage, check the taste of the curry gravy. Add more salt if necessary.
Check also that the gravy can cover the fish head.

Add the vegetables and bring to a boil.
Finally add in the fish head, bring the mixture to a boil.
Cover the wok or the pan, turn the heat to medium low and let the fish simmer in the gravy.
This let the fish head absorbs the flavour of the curry and in turn, the bones of the fish will sweeten the curry.

Cooking time is about 10 minutes.

As a guide, the cooking time for 500 grams of fish is 8 minutes. Add 1 extra minute for every 100 grams extra of fish.

Dish out and serve with garnish.

Persimmon Fruit And Health Benefits

This brightly colored orange fruit is rather high in carbs and natural sugars. In addition to the tannins which give the immature fruit its astringent taste, it contains two compounds known as shibuol and betulinic acid that are though to have anti-cancer properties. A study conducted in Japan showed that the peel of the persimmon contains phytochemicals known as proanthocyanidins which may protect cells against oxidative damage associated with aging.

Although eating persimmons may have significant health benefits, there’s one potential drawback. Because they contain the compound shibuol, they have the capacity to react in the acid environment of the stomach to form a gooey compound which can cause an intestinal obstruction known as a bezoar. In many cases, if a bezoar is formed from eating persimmons, it can require surgery. For this reason, persimmons should only be eaten on a full stomach and never eaten with crabmeat which can increase the tendency for bezoars to form. Persimmon can cause constipation.

Recipe - Baby Kai Lan (Kale) With Oyster Sauce

Kai lan or kale is being recognised for its store of nutrients, health benefits and delicious flavour. It has a high concentration of vitamins A, C and K and sulphur containing plant nutrients. It is also a good source of minerals copper, potassium, iron, manganese and phosphorous.

In this recipe, the baby kai lan is cooked with oyster sauce in a microwave oven and garnish with a generous mix of crispy garlic with oil and crispy shallots.

Ingredients
200 grams of baby kailan
1 tbs of oyster sauce
5 cloves of garlic, finely chopped
2 tbs of oil
2 tbs of crispy shallots

Method:

Put the chopped garlic and oil in a small bowl.
Microwave on high for about 2 minutes.
Start with one minute and use increments of 20 seconds, so as not to burn the garlic.
When the garlic starts to brown and is fragrant, it is done.
Set aside.

Arrange the baby kai lan in a serving plate and drizzle 1 tablespoon of oyster sauce over the vegetables.
Microwave on high for 3 minutes.
It is done when you see the kai lan wilt.

Spoon the crispy garlic and oil over the vegetables. 
Mix well.
Garnish with crispy shallots and serve.

Enjoy this platter of goodness at home for about $1 whereas at a restaurant, it will set you back by about $10.

Recipe - Cabbage Stir Fry With Carrot And Black Fungus

Cancer prevention tops the list of health benefits of cabbage. Cabbage is rich in antioxidants, anti-inflammatory and glucosinolates which prevent cancer. Carrots are known for the rich supply of beta-carotene, among other antioxidants. Carrots promote vision health. The black fungus helps to reduce blood pressure and cholesterols.

In this recipe, the cabbage is stir fried with carrot and black fungus. The cabbage and carrot are sweet while the black fungus on its own has no flavour but absorbs the flavour of the sauces and seasoning it is cooked with.

The black fungus comes in dried form and has to be soaked in water for 30 minutes before cooking. It has a crunchy texture when cooked.

Ingredients:
300 grams cabbage, cut into bite size
1 carrot, cut into slices
2 pieces of black fungus, soaked in water and cut into bite size
1 tbs of dried shrimp (for flavour)
2 tbs of light soy
A dash of pepper
5 cloves of garlic, finely chopped
1 tbs of oil

Method
Heat the oil in a wok or pan
Toss in the dried shrimp and garlic when the oil is hot.
Fry for a minute or so, till dried shrimp and garlic gives flavour
Toss in the cabbage, carrot and black fungus.
Stir fry for a minute for the vegetables to absorb the flavour.
Add half a cup of water and cover the wok or pan
Let the vegetables steam for 2 to 3 minutes to quicken the cooking.
Remove the cover, add pepper and stir for the last 1 minute.
The vegetables should be soft enough with a bit of crunch.
Serve and enjoy a plate of goodness.

In this Taiwanese video, cabbage is blanched in boiling water to soften the leaves. Cabbage is steamed with minced pork. Chopped ginger, chopped mushrooms, rice wine, pepper, light soy and wolfberries are added to the minced pork. As a bonus, a hard boiled egg braised with oyster sauce is wrapped inside the pork. Sesame oil is added last for flavour.


 

In this Taiwanese video, eggs are added to add fragrance to the cabbage, carrot and black fungus. Preserved bean curd is used instead of salt and sesame oil is added last.

Recipe - How To Cook Bird Nest Soup

Bird's nest is made from the saliva of swiftlets, a kind of bird. The swiftlets use a glutinous secretion to bind together materials for nest building. The secretion comes from glands located below the tongue of the birds.
Once the eggs are hatched and the young birds are able to fly, the nests are abandoned by the birds. If the nests are not harvested by humans, scavengers like lizards and ants will consume the nests.

The bird nest has a high content of protein and minerals like zinc, copper, iron, sodium and phosphorous. This protein has essential amino acids which helps to regenerate body cells. Legend has it that taking bird nest regularly will promote youthful smooth complexion and healthier skin tone. In short, eating bird nest regularly will give a person a fair and smooth skin.

In this recipe, ginseng is added to boost the immune system, while rock sugar is added for sweetness. A pandan leaf is added for fragrance.

As a guide, one piece of bird nest can make one or two servings (small bowl).

Ingredients (5 servings)
5 pieces (each is about 5 grams) of  bird nest
A few pieces of ginseng
1 tablespoon of rock sugar
ginseng slices
1 pandan leaf.
5 bowls of water

Method
Step 1.
Soak the bird nest in water for 3 hours or overnight.
Check the bird nest for loose feathers and take them out.
Step 2
Double boil the bird nest with ginseng and pandan leaf in low heat for 2 hours.
Step 3
Add rock sugar at the last 15 minutes

Caution: bird nest may not be suitable for everybody.

The Story Of A Son

A wealthy man and his son loved to collect rare works of art. They had everything in their collection, from Picasso to Raphael. They would often sit together and admire the great works of art.


When the Vietnam conflict broke out, the son went to war. He was very courageous and died in battle while rescuing another soldier.

The father was notified and grieved deeply for his only son.

About a month later, just before Christmas, there was a knock at the door.  A young man stood at the door with a large package in his hands.

He said, "Sir, you don't know me, but I am the soldier for whom your son gave his life. He saved many lives that day, and he was carrying me to safety when a bullet struck him in the heart and he died instantly. He often talked about you, and your love for art.

The young man held out his package. "I know this isn't much. I'm not really a great artist, but I think your son would have wanted you to have this."

The father opened the package. It was a portrait of his son, painted by the young man. He stared in awe at the way the soldier had captured the personality of his son in the painting. The father was so drawn to the eyes that his own eyes welled up with tears.

He thanked the young man and offered to pay him for the picture. "Oh, no sir, I could never repay what your son did for me. It's a gift."

The father hung the portrait over his mantle. Every time visitors came to his home he took them to see the portrait of his son before he showed them any of the other great works he had collected.

The man died a few months later. There was to be a great auction of his paintings. Many influential people gathered, excited over seeing the great paintings and having an opportunity to purchase one for their collection  On the platform sat the painting of the son.

The auctioneer pounded his gavel. "We will start the bidding with this picture of the son. Who will bid for this picture?"

There was silence. Then a voice in the back of the room shouted, "We want to see the famous paintings. Skip this one."

But the auctioneer persisted, "Will someone bid for this painting? Who will start the bidding? $100, $200?"

Another voice shouted angrily, "We didn't come to see this painting. We came to see the Van Goghs, the Rembrandts. Get on with the real bids!  "But still the auctioneer continued, "The son! The son! Who'll take the son?"

Finally, a voice came from the very back of the room. It was the longtime gardener of the man and his son. "I'll give $10 for the painting." Being a poor man, it was all he could afford.
"We have $10, who will bid $20?" "Give it to him for $10. Let's see the masters." "$10 is the bid, won't someone bid $20?" The crowd was becoming angry. They didn't want the picture of the son. They wanted the more worthy investments for their collections. The auctioneer pounded the gavel.  "Going once, twice, SOLD for $10!

A man sitting on the second row shouted, "Now let's get on with the collection!" The auctioneer laid down his gavel, "I'm sorry, the auction is over."

"What about the paintings?"

"I am sorry. When I was called to conduct this auction, I was told of a secret stipulation in the will. I was not allowed to reveal that stipulation until this time. Only the painting of the son would be auctioned. Whoever bought that painting would inherit the entire estate, including the paintings. The man who took the son gets everything!"

God gave his Son 2,000 years ago to die on a cruel cross. Much like the auctioneer, His message today is, "The Son, the Son, who'll take the Son?" Because you see, whoever takes the Son gets everything.

Recipe - How To Make Singapore Rojak


The Singapore rojak is a crisp, savoury fruit salad. Usually cucumber,  bean sprouts, pineapple, turnips, green mango, yu tiao (crispy Chinese crullers) and tau pok (crispy fried bean curd puff) are mixed in this salad.  A dressing made from prawn paste, tamarind sauce, sugar and chili paste is added to the mix, then garnished with crushed peanuts.

The dish is eaten with bamboo skewers; you pick up the pieces one by one and pop them in your mouth. The medley of flavours in rojak is exquisite - a combination of savoury, sweet, and sour with the delightful crunch.

Recipe
For the dressing:
2 tbs of prawn paste
2 tbs of tamarind sauce (tamarind paste mixed in water)
2 tbs of sugar
half teaspoon of chili paste
half a teaspoon of belacan powder (optional)

The usual ingredients for the salad are:
cucumber or zucchini
pineapple
belacan or dried shrimp paste
crispy yu tiao
crispy tau pok (roasted fried bean curd puff)
turnip (jicama or yam bean)
blanched bean sprouts (optional)

4 tablespoons of crushed peanuts.

Method:
 In a large mixing bowl, toss the ingredients for the dressing.
Stir and mix them well.

Cut the salad ingredients into bite size and toss them into the bowl.

Top with the crushed peanuts and serve.

Note:  Adding shreds of torch ginger bud (bunga kantan) would give the dish additional kick.

Story Of The Hospital Window

Two men, both seriously ill, occupied the same hospital room. One man was allowed to sit up in his bed for an hour each afternoon to help drain the fluid from his lungs. His bed was next to the room's only window. The other man had to spend all his time flat on his back. The men talked for hours on end. They spoke of their wives and families, their homes, their jobs, their involvement in the military service, where they had been on vacation. 

Every afternoon when the man in the bed by the window could sit up, he would pass the time by describing to his roommate all the things he could see outside the window. 

The man in the other bed began to live for those one-hour periods where his world would be broadened and enlivened by all the activity and color of the world outside. 

The window overlooked a park with a lovely lake. Ducks and swans played on the water while children sailed their model boats. Young lovers walked arm in arm amidst flowers of every color and a fine view of the city skyline could be seen in the distance. 

As the man by the window described all this in exquisite detail, the man on the other side of the room would close his eyes and imagine the picturesque scene. 

One warm afternoon the man by the window described a parade passing by. Although the other man couldn't hear the band - he could see it. In his mind's eye as the gentleman by the window portrayed it with descriptive words. 

Days and weeks passed. 

One morning, the day nurse arrived to bring water for their baths only to find the lifeless body of the man by the window, who had died peacefully in his sleep. She was saddened and called the hospital attendants to take the body away. 

As soon as it seemed appropriate, the other man asked if he could be moved next to the window. The nurse was happy to make the switch, and after making sure he was comfortable, she left him alone. 

Slowly, painfully, he propped himself up on one elbow to take his first look at the real world outside. He strained to slowly turn to look out the window beside the bed. 

It faced a blank wall. The man asked the nurse what could have compelled his deceased roommate who had described such wonderful things outside this window.
