Recipe - Peanut Crusted Chicken Fingers

This quick and easy recipe uses chicken fillet which is the softest and least fatty part of the chicken. The fillet is cut into one and a half inch length, marinated and coated with crushed roasted peanuts before frying. The roasted peanuts are first crushed into coarse pieces with a food processor and mixed with corn flour.

Recipe:
300 grams chicken fillet, cut into one and half inch strips

Marinade:
1 tbs oyster sauce
1 tps light sauce
1 tsp sesame oil
1 tsp sugar
A dash of pepper
1 tsp of corn flour

Other ingredients
3 tbs of roasted peanuts, crushed
2 tbs of corn flour
2 tbs of oil for frying.

Method:
Marinate the chicken with the marinade for 15 minutes
Mix the roasted peanuts and corn flour
Coat the chicken fillet with the flour and  peanut mixture
Heat the oil in a pan in mediun low heat
When the oil is hot, toss in the chicken fillet
Takes about 2 minutes to fry each side of the chicken fillet to golden brown.
