Recipe - Tandoori Chicken

This savoury and aromatic chicken dish is a favourite in India. When I was first introduced to this dish in an Indian restaurant in Singapore, I was smitten. I had to try to learn the recipe.

The restaurant had a real tandoor which is a cylindrical oven using charcoal for heating. Cooking at home with an electrical oven is not exactly the same thing but the chicken taste just as good. Drumsticks or thighs are perfect for this recipe.

Recipe(serves 5):
5 chicken drumsticks
1 cup yogurt, 150 ml.
2 tbs ginger garlic paste
2 tbs garam masala powder. I use the brand "Housebrand". It is very fragrant.
1 tbs salt
1 tbs sugar

Method:
Cut slits on the chicken drumstick so that the marinade can get into the drumstick.
Rub the salt and sugar on the chicken drumsticks.
In a mixing bowl, add the yogurt, garam masala and ginger garlic paste.
Marinate the chicken in the mixture and let them sit overnight in the fridge.

Grill in the oven at 200 degrees C for about 30 minutes.
Turn the drumsticks at about the 20 minute mark or when the drumsticks start to turn brown.
If you like it a bit sweeter, drizzle a bit of honey after you turn the drumsticks.
