Recipe - Mixed Vegetables Curry (Sayur Lodeh)

This popular local dish is also known  by its Malay name as sayur lodeh or mixed vegetables. This is a dish of mixed vegetables cooked in a spicy sauce with coconut milk.  

I like mine "hot", so I add a lot of chillies.


To prepare this dish, the spices are first blended into a paste This paste is then fried till fragrant and made into a gravy with coconut milk and water. Vegetables and other ingredients are added and simmered till cooked.

This dish can be cooked as a side dish but in this recipe, I am cooking it as a one dish meal.


Ingredients for chilli paste (serves 5):
Handful of dried chilies, about 50 grams
2 small chillies, for added hotness
1 thin slice of belecan (dried shrimp paste)
belacan or dried shrimp paste
2 tbs of dried shrimp
1 inch of lemon grass, cut into small pieces
1 large onion, cut into small pieces
A slice of ginger
2 cloves of garlic
1 candle nut
1 thumb of fresh turmeric

60 ml of coconut milk
1 tsp of salt

Vegetables
Half a cabbage, cut into bite size
100 grams of long beans, cut into inch length
(oops! miss out carrot)

Other Ingredients
25 quail eggs, boiled and shells taken out (5 for each person)
10 fish balls (2 for each person)
Yong tau fu, 5 pieces of bitter gourd, big green chilli, bean curd, crispy pig skin and tau pok(bean curd puff), each stuffed with fish meat. (one piece for each person)
2 tbs of oil for frying

100 grams of noodles for each person

Method;
Blend the chilli ingredients into a paste (except coconut milk).

In a wok, heat the oil till fragrant in medium heat and fry the paste till fragrant. Takes a couple of minutes.
Add 1 litre of water and bring to a boil.
Add the cabbage and long beans and cooked for a couple of minutes.
Finally add the fish balls, eggs and yong tau fu
Add coconut milk and a teaspoon of salt to taste

I boil noodles separately. put in a serving boil and pour in the curry gravy.

The curry vegetables dish is also very similar to cooking laksa.

For added flavour add a teaspoon of dried shrimps for the paste.
