Recipe - Mince Pork Pasta With Tomatoes And Bacon Chips

This quick and easy recipe is packed with rich nutrients from the tomatoes. Tomatoes are rich in moisture, vitamins and minerals, and plant nutrients.  They are an excellent source of vitamins C, B6 and K, betacarotene, biotin, niacin, potassium, phosphorous, calcium, iron, zinc and selenium, as well as many organic acids such as citric and malic acids which are responsible for the characteristic tomato flavour.


This healthy one dish meal can be done quickly for breakfast, lunch or dinner. 


Ingredients (serve 1):

50 gm pasta, boiled for 8 to 10 minutes or according to instruction
(Note: an average person can normally eat 100 grams)
50 gm mince pork
bacon, 1 slice, cut into small pieces
1 clove garlic, finely chopped
3 pcs shallots, finely cut
1 fresh tomato, cut into cubes
1 canned tomato, cut into cubes (if you have)
4 button mushrooms (champignons), cut into strips (this is always handy to have at hand) 
1 green chilli, cut into small pieces (if you have)
2 basil leaves, finely chopped (if you have)
1 sprig spring onion, cut into inch length
 ½ tsp balsamic vinegar (if you have)
Dash of black pepper and chilli flakes
1 tbs of cooking oil

Method:
Boil the pasta and set aside.

Fry the bacon chips in oil till crispy and set aside
Use the bacon oil to fry shallots, garlic and green chilli  till fragrant
Add minced pork, fresh tomatoes, canned tomatoes and sliced button mushrooms.
Add some canned tomato juice.
Season with ½ tsp balsamic vinegar, black pepper
Throw in spring onions and basil leaves
Add pasta and mix well. 
Garnish with crispy bacon chips and red chilli flakes for extra spicy kick.
