Recipe - Seafood Fried Rice With Salted Fish

The wonderful thing about cooking fried rice is the ingredients. The basic ingredient is cooked rice, preferably left overnight. This reduces the amount of moisture in the rice. This makes it easier to fry the rice, which should be soft but not soggy.

The other ingredients are really up to individuals. Basically, the fried rice should be nutritious and flavourful.

In this seafood fried rice, I use prawns and squid. Salted fish is used for flavour and provides the salt for the dish.

For vegetables, bean sprouts and spring onions are used.

Ingredients (serves 2 )
1 cup of cooked rice, left overnight
3 eggs, beaten
4 prawns, shelled and de-vein
salted fish fillet
1 medium squid, clean and cut into rings
1 inch salted fish, cut into tiny pieces
1 cup of bean sprouts
1 sprig of spring onion, finely chopped
1 onion, finely chopped
2 tbs of oil

Method
Heat the oil the wok or pan on medium till hot
Toss in the pieces of salted fish, stir fry till fragrant and crispy. Set aside
Toss in the onions and stir fry for a minute
Toss in the rice and stir fry. Spread the rice as much as possible and let it fry.
Spread the beaten egg over the rice and let the mixture cook for about 2 to 3 minutes.
(It does not matter whether the rice go first or the egg)
Toss in the prawns and squid and stir fry for a minute or two.
(The prawns and squid cook very fast).
Finally, toss in the bean sprouts and spring onions. Stir fry for another minute.

The dish should be done. Dish out and spoon the fried salted fish over the rice.
The crispy salted fish and the bean sprouts will provide the crunch.
No salt is added as the oil used for frying the salted fish will be salty.
