Recipe - Sea Cucumber Stir Fry With Ginger And Spring Onions

Sea cucumbers are marine animals with a round elongated body and and a mouth at one end and  lots of tentacles for feeding. Shaped like a cucumber, sea cucumbers have a leathery skin and a distinctly phallic appearance.

Sea cucumbers are known for their anti-ageing properties. Sea cucumbers are considered a general health tonic and benefit people with chronic joint pains, sprains, ligaments stress and arthritis.

Like tofu, sea cucumber is flavorless, but has the ability to soak up the flavors of foods and seasonings it is cooked with. It is used in soups, stir-fries, and certain braised dishes.

In this recipe, the sea cucumber is given a quick stir fry with ginger, spring onion and dried shrimps.

Ingredients
150 grams sea cucumber thinly sliced,
1 tbs of dried shrimps
1 clove garlic, finely chopped
Shredded ginger slices, shredded from abt 8 slices
sea cucumber
Spring onions 2 stalks, cut into long strips 
Coriander leaves, 1 stalk, cut into long strips
1 tsp chilli paste
1 red chilli , sliced
1 tps light sauce
1 tbs cooking oil

Method
Heat oil in a wok or pan on medium
Fry dried prawns till crispy & fragrant, then dish out and set aside
In the remaining oil, fry garlic, and ginger and white portion of spring onion till fragrant
Add chilli paste and fresh chilli slices, mix well
On high heat add sea cucumber slices,  stir quickly and add some water
( if fresh prawns are used, add them in together with the sea cucumber )
Season with a teaspoon of light sauce.
Add spring onion and coriander leaves, fried dried prawns & turn off heat immediately

Delicious , served with warm steamed rice
