The banana is a super food.
It has amazing health benefits.
It can be eaten on its own and ripe bananas can also be used to make banana cake.
As the new saying goes, a banana a day keeps the doctor away.
This banana cake is relatively easy to make.
It is moist, delicious and healthy as a snack or a dessert.
INGREDIENTS:
3 or 4 ripe bananas (mashed)
75 grams butter (melted)
100 grams sugar (brown or white)
1 egg beaten
1 teaspoon vanilla
1 teaspoon baking soda
A pinch of salt
170 grams all purpose flour
For extra flavour, add a teaspoon of cinnamon powder.
METHOD
Preheat oven to 175 degree C
With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
Mix in the sugar, egg and vanilla.
Sprinkle the baking soda and salt over the mixture and mix well.
Add the flour last and mix.
Pour mixture into a buttered 4 x 8 inch loaf pan.
Bake for 1 hour.
Cool on a rack about 10 minutes.
Remove from pan and slice to serve.
(Note: With 4 bananas, the cake is moist and sweet. With 3 bananas, the cake is dry and less sweet.)
