In this recipe, I use chicken thighs, with bone but without skin. For the curry, I use Babas meat curry powder. The spices in the meat curry powder are coriander, aniseed, cumin, cinnamon, cardamon, star anise, cloves, and other spices. Although the spices are quite complete for curry, I added extra spices for stronger flavour.
Ingredients:

2 potatoes, cut into bite size
1 large onion, chopped
5 cloves garlic, finely chopped
1 inch ginger, finely chopped
1 lemon grass
1 tsp of salt
2 tbs oil
40 ml of coconut milk

I added these extra spices for stronger flavour

1 tbs turmeric powder
a pinch each of cloves, cumin, fennel, and fenugreek

Method:
In a pan, heat the oil on medium and fry the onions till fragrant.
Toss in the ginger, garlic, lemon grass, cloves, cumin, fennel, fenugreek and cinnamon.
Stir fry for another minute to release the fragrance of the spices
Toss in chicken thighs, curry powder, coriander powder and turmeric powder.

Add water, enough to cover the chicken half way.
Bring to a boil.
Add the potatoes and coconut milk.
Cover the pan and let the curry simmer on low heat for about 30 minutes.
Slow cooking allows the chicken to absorb the curry flavour.
Curry should be done.
