Recipe:
1 eggplant (about 200 grams, cut into bite size)
50 grams mince pork
1 tomato (diced)
1 tbs oyster sauce
1 tsp sugar
3 cloves garlic, finely chopped
1 tbs cooking oil
coriander leaves for garnishing
Method.
In a wok or pan, heat the oil and garlic till fragrant.
Add in the mince pork and stir fry till cooked
Add the rest of the ingredients and a cup of water.
The water should be just enough to cover the ingredients.
Stir once a while till the eggplant softens and changes colour.
Cooking time is about 5 minutes.
Garnish with coriander leaves and serve.
