Mixing a variety of vegetables in a dish is always a treat if they combine well. They add colour to the dish and makes it more appealing. More importantly, the variety of vegetables will provide lots of vitamins and minerals to nourish the body. In this recipe, prawns, button mushrooms and roasted cashews are added to the snow peas and carrot for extra sweetness and colour.
250 gm snow peas, trimmed
1 carrot, peeled and cut into slices
button mushrooms (champignon) 1 tin
3 cloves garlic (finely chopped)
5 prawns (shelled and devein)
roasted cashews (about 10 pieces) for garnishing
1 tbs cooking oil
1 tbs oyster sauce
dash of white pepper
Heat oil in wok or pan, fry the garlic till fragrant.
Toss in prawns and stir fry for a minute.
Toss in snow peas, carrot and mushrooms and add oyster sauce.
Stir fry for about 3 minutes until tender
Garnish with roasted cashews and serve.
