Recipe - Xiao Bai Chye With Oyster Sauce

This leafy green vegetable is packed with vitamins A and C with lots of fibre to promote digestion. It also has lots of iron and calcium, good for the heart and helps to prevent osteoporosis.

For this recipe, oyster sauce is used to flavour the vegetables with a generous garnishing of garlic and crispy shallots.

Ingredients:
5 cloves garlic finely chopped.
250 gm xiao bai chye
2 tbs of cooking oil
1 tbs of oyster sauce
2 tbs of crispy shallots (link)

Method:
In a small bowl, put in the garlic and the oil. Microwave on high for about 2 mins until the garlic is golden brown. Start with one minute with increments of 20 seconds, so as not to burn the garlic (see picture above on right).

Wash the vegetables, cut the whole leaf and lay them on a serving plate. Drizzle the oyster sauce on the vegetables and heat in microwave on high for 2 minutes. This timing of 2 minutes is perfect for 250 grams of vegetables
(see picture on the right).

Once the vegetables are done, sprinkle the crispy garlic and oil on the vegetables and mix them well.

Garnish generously with the crispy shallot.

That's it, enjoy a platter full of flavour and goodness. Goes very well with rice or porridge.
